With summer in full swing, it’s time to whip up some tasty treats to make the most of those delicious seasonal goodies. Cooking is also a valuable life skill for your students – so, what more excuse do you need?

This blog introduces you to some simple, but mouth-watering, summer recipes to try out with your little folks in their food tech lessons next term, or to serve up to kids in the school canteen.

Epic summer recipes for schools

1) Sweetcorn fritters with black bean salsa

Serves four

How to make it:

1) Heat the oven to 200°C/180°C fan/gas 6 and line a large baking tray with baking parchment.

2) Heat the oil in a small pan. Chop and fry 1 small red onion and 1 finely-diced red pepper for 5 mins until softened. Meanwhile, mix 100g of wholemeal self-raising flour, 1 tsp smoked paprika, 1 tsp ground coriander and 1 tsp baking powder in a bowl. Add the cooked onions and pepper, a 325g can of sweetcorn (drained) and 2 eggs to the bowl, then mix together well.

3) Spoon 8 mounds of the mixture onto the baking tray, ensuring you space them well apart, then pat flat with the back of the spoon. Bake for 20 mins until set and golden.

4) Meanwhile, make the accompanying salsa. Mix together 1 finely-chopped small red onion, 4 chopped tomatoes, 2 x 400g cans black beans (drained), 1 lime (zested and juiced) and 30g of chopped coriander. Poach 4 eggs to your liking, then top the fritters with the salsa and poached eggs – and serve!

2) Berry smoothie

Makes one smoothie

How to make it:

1) Add 1 mug of any type of frozen berries, 1 mug of almond milk (or regular milk if preferred), 6 tbsp natural yoghurt, 1 banana, 1 handful of porridge oats and 1 tbsp sunflower seeds to a blender. Close the lid and blitz until smooth.

2) Pour into glasses or cups and serve! Or, add to ice-lolly moulds and put in the freezer overnight.

3) Pineapple and pork skewers

Serves four

How to make it:

1) Cut 400g of pork fillet into cubes. Heat 4 tbsp of light muscovado sugar and 50 ml of cider vinegar in a pan over a low heat until the sugar melts. Add 1 tsp of fish sauce and leave to cool. Add the pork and mix well, so that all the cubes are covered in the sauce.

2) Heat a griddle plan. Peel, core and cut half of a small pineapple (or use ready prepared fresh pineapple, drained well) and thread it and the pork onto skewers, alternating with chunky pieces of chopped green pepper and chopped spring onion.

3) Cook the skewers for at least 5 minutes on each side. Serve with pitta bread or rice, and sprinkle the skewers with coriander (optional).
